- Place 1-2 teaspoons of loose leaf tea per cup (250ml) in an infuser or teapot.
- For this specific tea we recommend to not pour over the water, but instead lower the leaves into it. The ideal water temperature is not boiling, but 80°C to 85°C.
- Infuse for around 1.5-2 minutes depending on your desired strength. Please note that over-steeping or too hot water temperature might turn this blend bitter tasting.
- Optional: complement with a slice of lemon and/or honey to taste. We recommend to enjoy it pure, straight up.

After finishing your brew, we encourage you to return your steeped herbs back to the earth, for example in your home compost, worm farm or garden waste, allowing it to breakdown into organic matter and return to nourish our environment.

Antioxidant and anti-inflammatory action
Most of the research on green tea’s protective effects centres on its catechins, especially epigallocatechin gallate (EGCG). Most of this evidence comes from lab and animal studies, and human research is still limited, as the 2010 review linked above notes.
Energy and focus
Sencha contains caffeine along with L-theanine, an amino acid found in tea. A 2014 systematic review and meta-analysis of 11 placebo-controlled human studies found that caffeine combined with L-theanine improved self-rated alertness and the accuracy of attention switching in the first two hours after dosing. These studies tested tea compounds, not sencha itself, so the effect of a cup may differ.
Metabolism
Mixtures of catechins and caffeine increased 24-hour energy expenditure by 4.7% and fat oxidation by 16.0% compared with placebo, in a 2011 meta-analysis. These studies were short term, so the long-term effect is not known.
Heart health
In a 2015 meta-analysis of 18 prospective cohort studies, the highest green tea intake was linked to a 33% lower risk of death from cardiovascular disease than the lowest intake. This is an association from observational studies, not proof that green tea protects the heart.
Skin
Green tea polyphenols have been studied for protection against UV damage. Most of this work is in mice, and the effect on human skin is still poorly understood. Green tea does not replace sunscreen.

In order to prevent oxidisation of the leaves, Sencha Green Tea is first steamed for 15-20 seconds. Then, the leaves are rolled, shaped, and dried. This step creates the customary thin cylindrical shape.
Originally from Kyoto Japan, Sencha Tea (sometimes written Sen Cha) has a more refined taste when compared with other types of green tea. When freshly brewed, Sencha Green Tea is one of the few teas actually green in colour and not yellow.
Matcha green tea is grown in the shade, while Sencha is grown in full sunlight. In Japanese Matcha whole leaves are ground up, but the stems and veins are removed first. Because you drink the whole leaf, Matcha usually has more antioxidants per serving than Sencha. Sencha has a “grassy” flavour profile and is a bit more pungent than Matcha. It also has a naturally lower caffeine content than Matcha.
Yes. For the first brew, steep for about 2 minutes. For the second brew, use slightly hotter water and steep for a shorter time, about half of the first brew.
Bitterness usually comes from brewing too hot or steeping too long. Use slightly cooler water, shorten the steep, and pour the tea out of the pot straight away so it does not keep brewing.
Yes. Cold brewing is an alternative to hot brewing. It gives a lighter cup that is less bitter and less astringent, with lower levels of EGCG and caffeine.
Pregnant women should have no more than 200 mg of caffeine a day. A cup of black or green tea contains about 75 mg, so three cups would go over that limit. Speak to your doctor or midwife about your own intake.
These names describe the steaming style. Asamushi is steamed for the shortest time and has a fresh, grassy taste with a slight tannin. Chumushi has a more classic sencha taste. Fukamushi is steamed for longer, which gives a stronger, darker cup.
