These are blends that either feature native Australian botanicals (like lemon myrtle or wattleseed) or are inspired by Australian traditions and landscapes, like for example the Outback Chai.
Lemon myrtle for its intense citrus aroma, sharper and cleaner than lemon itself. Roasted wattleseed for its dark, nutty, almost coffee-like depth. Quandong, the desert peach, for tart stone-fruit brightness. Tasmanian pepper berry for a slow, warming heat that arrives after the sip rather than during it. Eucalyptus for its cooling, resinous edge. Each is used because it does something no imported botanical does.

Australian Breakfast and Australian Wattleseed are both built on a black tea base, so they contain caffeine. Bush Blush and Outback Chai contain none at all. If caffeine free is what you're after more broadly, browse our caffeine free herbal collection.
It depends on the base. The two black tea blends want water straight off the boil and three to five minutes. The caffeine-free blends are built on herbs and native fruit, so they benefit from a longer steep with the cup covered, which keeps the volatile citrus oils in lemon myrtle from escaping with the steam.
