Roasted stuffed butternut squash

  • 2 medium butternut squashes
  • 1 cup quinoa
  • 2 cups vegetable broth

  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 190°C.
  2. Cut the squashes in half lengthwise and scoop out the seeds.
  3. Brush the insides with olive oil and season with salt and pepper.
  4. Place the squashes cut side down on a baking sheet and roast for 30 minutes.
  5. While the squashes roast, cook the quinoa in vegetable broth until tender.
  6. In a bowl, combine the cooked quinoa, cranberries, pecans, parsley, and a drizzle of olive oil.
  7. Stuff the roasted squashes with the quinoa mixture.
  8. Return to the oven for an additional 15 minutes or until the squashes are tender.
  9. Serve with a drizzle of olive oil and fresh parsley on top.
vegan mushroom wellington

Ingredients:

  • 1 sheet puff pastry (vegan if desired)
  • 1 pound mixed mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • Fresh thyme leaves

Instructions:
